WINEMAKING
After hand-harvesting into 15 kg crates, the grapes were taken to the winery and processed immediately. Following full destemming and gentle crushing, they were transferred to clay amphorae for fermentation. During fermentation, the cap was gently punched down twice a day.
To cool the amphorae, their exterior was moistened with cold water several times a day, bringing the fermentation temperature down to around 17–18 °C. After fermentation, once the desired extraction had been achieved, the wine was racked into another amphora, where it aged until bottling.
SERVING
Serve at 16–18 °C.
FOOD PAIRING
A versatile food wine. Pairs well with all kinds of meat, cured meats, cheese and other traditional regional dishes.
